Bagala bath or curd rice is a perfect way to use leftover rice in our house and is always a hit with the kids. You can count my kids to finish their Bagala Bath without any complains. Needless to say, its a staple to my kitchen. The beauty of this dish is its simplicity but don’t let that fool you as its flavor can give complex dishes a run for their money. Its the perfect comfort food.
Over time I have learnt some tips and tricks to get perfect Bagala Bath every time. Even though its a very simple dish, if the ingredients are not mixed in the right proportion it can affect the taste a lot.

How to make Bagala Bath?
Tips and Tricks:-
- The sourness of the curd needs to be taken into account when mixing the rice with it. If it is very sour then you might want to use less curd and slightly more milk to balance it out.
- The mushier the rice the better the texture. This is the reason why it is made with leftover rice.
- Always take into account time difference between when you are making it and when it will be consumed. If the time difference is 1-2 hours then the taste will not vary much. However, if you plan to consume it say 6-8 hours later then use much lesser curd and more milk. As the curd and milk will be together for 6-8 hours slowly the milk will change to curd and keep the sourness in check. If you use only curd or very less milk then after 6-8 hours Bagala Bath will become very sour.
- If it has been stored for few hours then the rice tends to absorb the liquid and it becomes dry. So right before you are ready to eat, mix it well and add some water to get the right consistency.
- You can also add nuts like cashews in tempering to give it a rich taste.
- Pomegranate and grapes can also be added to add another flavor dimension to Bagala Bath.
Bagala Bath
Servings: 4
Ingredients
- 1 cup yogurt
- 1 cup rice at room temperature
- 1 tbsp. oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 inch ginger finely chopped
- 2 tbsp. curry leaves
- 2 chili optional
- 1 tsp salt per taste
Instructions
- Take your left over rice and mix yogurt into it. Add enough yogurt to give it a paste like consistency. You can add some water or milk as well if the yogurt is very thick.
- Add some salt to this paste you have prepared using rice, yogurt, milk and water.
- For tempering, heat some oil in a pan. When hot add cumin and mustard seeds along with some asafetida.
- Add some chopped ginger, chili and curry leaves. You can skip chili if needed as these are optional. Let these cook well but make sure they do not get burnt. You can lower the gas flame to reduce the heat and keep stirring.
- Add the tempering to the rice and yogurt paste we had prepared. Mix them well and your Bagala Bath is ready.
